A growing trend these days is to use coffee in Barbque rubs. If you’re not sure what to do, you aren’t alone. It’s a relatively new thing.
So, first things first, you need to start with some high-quality specialty coffee. If it doesn’t taste great in your cup, it probably won’t help your brisket much either.
The next thing to keep in mind is that this is more of a supporting ingredient and not the star of the show here. Too much coffee can make your meat take on a bitter flavor, so to start out keep it town to a tablespoon in your mix. You can always add more the next time around.
You want to grind your coffee to be about the same size as the salt and other ingredients in your rub.
It works great in a sweet rub based on brown sugar, or a spicy one that’s more pepper based. Another great option to get you started is to buy a commercially produced rub and add a little coffee to taste. Have fun and enjoy!
